Seveneves is the other of two labels by Mauricio Ruiz Cantú and Benjamin Caldwell, also proprietors of Somos. Seveneves is focused on classic French varieties, but approached with a bit of the same playful enthusiasm as we see in the Somos wines, and all from a single vineyard in Macclesfield, Adelaide Hills. The vineyard is farmed organically and sits on the south eastern border of the region at 410m altitude, with a higher diurnal shift and drier conditions to the rest of the hills. This allows Ben and Mauricio to craft wines of great freshness and detail.
Techniques such as whole-bunch fermentation, carbonic maceration and prolonged skin contact are eagerly applied, but the wines always stay true to variety and the main goal is to bringing out the best in each variety.

The Best Cellars View:
A light and very bright style of Pinot. The nose shows the carbonic ferment, by virtue of its pure and lifted aromas of red cherry and artisanal blackberry vinegar, supplemented by little hints of something fresh and gently green, like freshly cut flower stems. On the palate the wine shows more fine tuned forest berry fruit, framed in lively acidity which goes on and on. A simply delicious Pinot for those who like to sip with a cheer, and not worry too much about the how and why.
